Pacific Rim Morning Muffins


Asian ingredients and flavors accent these muffins, with dried tropical fruit, macadamia nuts, candied ginger, and coconut milk.



Ingredients:

  • 2 3/4 cups all purpose flour
  • 1/3 cup dried tropical fruit bits
  • 1/3 cup finely chopped macadamia nuts
  • 2 tbsp finely chopped crystallized (candied) ginger
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp grated ginger root
  • 1 cup light unsweetened coconut milk
  • 2 eggs, beaten
  • 1/2 cup honey
  • 1/4 cup vegetable oil
  • 1/2 tsp orange extract
  • 1 cup shredded carrots
  • 1 tbsp sesame seeds

Method

In a large bowl combine flour and next 6 ingredients. In a medium bowl whisk together the rest of ingredients (except sesame seeds) until well blended. Add to the flour mixture, stirring to evenly moisten. Divide batter among 12 oiled muffin cups. Sprinkle on sesame seeds. Bake at 375 degrees 20-25 minutes or until muffins test done.
