Pan de Mocha Latte

Egg dough is flavored with espresso powder, cocoa powder and cinnamon. As a surprise there's sugar and cinnamon swirled inside the dough.
Ingredients
- Bread:
- 1 cup milk
- 2 tablespoons butter or margarine
- 1 egg, slightly beaten
- 1 teaspoon instant espresso powder
- 1 teaspoon unsweetened cocoa powder
- 1/4 cup sugar
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 3 1/2 cups unbleached all-purpose flour
- 2 teaspoons active dry yeast
- Cinnamon Swirl mixture:
- 1/3 cup sugar
- 1 teaspoon cinnamon
- Nonstick vegetable cooking spray

Place Bread ingredients in order given into the bread machine; set on Basic setting. Meanwhile, combine Cinnamon Swirl mixture ingredients. Just after the final stir, and before the final rise cycle begins, remove the dough from the pan (but do NOT turn the machine off!) to a lightly floured surface. Working quickly, roll dough to a 12x7" rectangle. Brush lightly with water and sprinkle with Cinnamon Swirl mixture. Roll up from one of the short sides. Fold ends under, forming a ball. Spray bread machine pan lightly with cooking spray, replace dough in the pan and continue cycle through final rise and baking cycles. Remove and cool.
Notes: This bread has a wonderful texture, almost cake-like. It's rich and delicious, like that first morning latte. It is important to move quickly after the dough has been removed from the pan in order to add the Cinnamon Swirl mixture, as you want the dough to get the maximum benefit from the final rise time. I like to remove the finished bread from the pan and rub the outside of the loaf with butter. This makes the crust very soft and tender.
