Pancake Mix Scones

Light and fluffy scones made from a pancake mix base.

Cranberry & Chocolate Chip Scones
3 cups Pancake Mix
1 stick Salted Butter, chilled
1 cup Milk
½ cup Dried Cranberries
½ cup Chocolate Chips
3 Tbsp Sugar


Preheat oven to 400 degrees. In a large bowl, combine pancake mix with chilled butter. Use a pastry cutter or a fork to incorporate butter with the mix until it is crumbly. Add 2 Tbsp. sugar, then milk and mix together. The dough should start forming. Add the cranberries and chocolate chips. Gather the dough in the bowl with your hands and form a large ball (I found this was easier to do in the bowl-- it's a lot to hold in your hands). Use some leftover pancake mix (or flour) to lightly cover a surface on which you will flatten out the ball of dough. Flatten the dough into a disk that is approximately 2-3 inches thick. With a sharp knife, cut the dough into sixteen slices. Place slices onto a greased baking sheet, sprinkle remaining 1 Tbsp. sugar to the scones, and bake for 10-15 minutes or until the scones are lightly browned.
