Pancake Muffins
Regular pancake mix is the shortcut used to make these maple syrup-sweetened muffins.
Ingredients
- 2 cups pancake mix
- 1 egg, beaten
- 1 cup of water
- 3 Tbsp maple syrup

Method
Preheat oven to 375 degrees. Whisk together pancake mix, water and egg until no lumps remain. Stir in maple syrup. Line muffin cups with paper liners. Fill each muffin cup about halfway up with mixture. Bake at 350 degrees about 20-25 minutes or until done.
