Peach-Blueberry Muffins

This muffin batter has rolled oats plus blueberries and mashed peaches folded into it.
 

Ingredients

  • 1 cup flour
  • 1/2 cup sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 3/4 cup oatmeal, quick or regular
  • 1 egg, beaten
  • 3 tbsp shortening, melted, or oil
  • 1/3 cup milk
  • 1/2 cup canned peaches, drained & mashed
  • 1/3 cup frozen blueberries, thawed

Method

Mix flour, sugar, baking powder, salt and baking soda. Stir in oatmeal. Combine and add remaining ingredients. Stir only until moistened. Fill medium-sized greased muffin cups 2/3 full. Bake at 400 degrees about 20 minutes.

 

Notes: If you find the batter too thick, add a little more milk until you get the right consistency.

 

Number of Servings: 6-12 depending on size
