Peanut Banana Chocolate Chip Muffins

Your family will love these moist muffins loaded with healthy peanut butter and bananas, especially when they find the hidden chocolate chips.
 

Ingredients

  • 1 3/4 cups flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted
  • 1 egg
  • 1/2 cup peanut butter
  • 1 1/2 cups mashed ripe bananas
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1 cup chocolate chips

Method

Preheat oven to 350 degrees and grease a muffin pan or line cups with paper liner and set aside. In a medium bowl, mix flour, sugar, baking powder, baking soda and salt. In another bowl, whisk melted butter, egg, peanut butter, banana and vanilla until well blended. Fold into dry ingredients alternating with milk just until blended. Add chocolate chips and divide between muffin cups filling about two thirds full. Bake for 20-25 minutes or until tester comes out clean. Cool for 5 minutes then remove to wire racks to cool. Repeat with remaining batter.

 

Notes: We love these muffins for a breakfast treat or after school snack. They are moist and flavorful with all the good stuff; peanut butter, chocolate and bananas. Everyone thinks they're super yummy. They freeze well too.
