Peanut Butter & Seaweed Banana Bread

Banana bread with peanut butter is made more nutritious with the addition of seaweed.

  • Servings: One loaf yields 10 servings.

Ingredients:

4 Eggs
2 cups Sugar
1 cup Oil
3 cups Flour
½ tsp Baking Powder
1 tsp Baking Soda
1½ tsp Salt
3 tsp Cinnamon
2 cups Peanut Butter
1 cup Sour Cream
3 tsp Vanilla
4 Bananas, mashed
¼ cup Finely Chopped Seaweed
1 cup Chocolate Chips, optional

Directions:

Cream together eggs, sugar, and oil in mixing bowl. In separate bowl combine flour, baking powder, soda, salt, and cinnamon. Combine egg mixture with flour mixture. Add peanut butter, sour cream, vanilla, bananas, and seaweed; mix well. Stir in chocolate chips, if using. Spoon into greased loaf pans. Bake at 350 degrees for 45 minutes. Cover with foil and bake an additional 15 minutes, or until a toothpick inserted in the center comes out clean. Cool, cover, and refrigerate. Makes 2 loaves.

Helpful Tips:

A delicious, nutritious way to get some seaweed eaten, which is loaded with rich minerals. Seaweed can be purchased in sheets. About 4 sheets makes 1/4 cup.
