Pecan Coffee Cake

A 2-layer cake mix and a package of instant pudding mix make this an easy-to-do coffee cake recipe. Sour cream, pecans and cinnamon are added too.
Ingredients
- 1 package (18-1/4 oz.) yellow cake mix
- 1 package (3.4 oz.) instant vanilla pudding mix
- 4 eggs
- 1 cup (8 oz.) sour cream
- 1/3 cup vegetable oil
- 2 teaspoons vanilla extract
- 2/3 cup chopped pecans
- 1/3 cup sugar
- 2 tablespoons ground cinnamon
- 1/2 cup confectioners sugar
- 2 tablespoons orange juice

Method
In a mixing bowl, combine the first 6 ingredients. Beat on medium speed for 2 minutes. Pour into a greased 13x9x2 inch baking pan. Combine pecans, sugar, and cinnamon; sprinkle over batter. Cut through with a knife to swirl. Bake at 350 degrees for 30-35 minutes or until a toothpick inserted near the center comes out clean. In a small bowl, combine confectioner?s sugar and orange juice until smooth; drizzle over warm coffee cake.
Notes: I served this for church coffee hour and it was an instant hit!
