Perky Pumpkin Muffins

Pumpkin muffins are spiced up with the addition of molasses, pecans and dried apricots.
 

Ingredients

  • 1 3/4 cups whole wheat flour
  • 1 1/4 cups turbinado sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 2 tsp pumpkin pie spice
  • 1/8 tsp cloves
  • 1 can pureed pumpkin
  • 1/2 cup skim or soy milk
  • 1/2 cup canola oil
  • 3 tbsp blackstrap molasses
  • 1/2 cup chopped pecans
  • 1/2 cup chopped dried apricots

Method

Preheat oven to 375 degrees. Lightly grease a 12 muffin tin or line with muffin paper cups. Mix together first 6 ingredients, flour through cloves, in one bowl. In a separate bowl, mix next 4 ingredients, pumpkin through molasses. Add wet ingredients to dry until just incorporated. Do not over mix. Fold in pecans and apricots. Fill muffin cups 2/3 full and bake 20-25 minutes or until a knife inserted into center comes out clean.
