Prize Winning Johnnycake

The ingredient that puts these Johnnycakes over the top is the buttermilk. Serve this great cornbread with chili or soup.
 

Ingredients

  • 2 2/3 cup all purpose Flour
  • 1 1/3 cup yellow cornmeal
  • 1 cup sugar
  • 3 tbsp baking powder
  • 1 tsp salt
  • 3/4 cup shortening
  • 2 large eggs
  • 1 cup milk
  • 1 cup buttermilk

Method

Combine dry ingredients in a large bowl. In a mixer, combine shortening, eggs, milk and buttermilk. Add dry ingredients gradually and mix well. Spray a 9 X 13 pan with nonstick spray. Pour in batter and level with a large spoon. Bake at 400 degrees for 25-30 minutes. Johnnycake is done when a knife inserted in center comes out clean.
