Puffy Pumpkin Muffins

Moist, tender pumpkin and walnut muffins with a dusting of sugar to glaze the top.
Ingredients
- 2 1/2 cups flour
- 6 tbsp sugar
- 1 1/2 tbsp baking powder
- 1 tsp salt
- 2 tsp cinnamon
- 1 tsp ground ginger
- 9 tbsp butter, cubed
- 1 cup walnuts, chopped
- 3/4 cup plus a little extra cream
- 3/4 cup canned pumpkin
- 3 tbsp honey
- Reserve a small amount of cream and sugar for glaze
- Optional, raisins

Method
Preheat oven to 350 degrees. In a large bowl combine flour, sugar, baking powder, salt, cinnamon and ginger. Work in butter until it is flaky then add walnuts. Add cream, pumpkin and honey. Do not overmix. Butter muffin pans or use paper liners. Before cooking, brush some cream onto muffins and sprinkle with sugar. Bake about 20 minutes or until golden brown.
Notes: Makes big muffins. Serve with butter and honey.
