Pumpkin Bites

These little bites are the perfect amount of fall spice. Top these desserts off with a great cream cheese frosting.
 

Ingredients

  • 2 cups sugar
  • 1 cup oil
  • 4 eggs
  • 1 15 oz can pumpkin
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp cloves
  • 1/2 tsp salt
  • 2 cups flour

Method

Preheat oven to 350 degrees. Generously spray mini muffin tins with nonstick cooking spray. In a large mixing bowl, combine sugar and oil on medium speed. Add eggs, one at a time, and pumpkin until well combined. With mixer on low speed, add dry ingredients and blend 1 minute. Fill muffin cups with 2 tsp batter. Bake 10-12 minutes, or until a cake tester inserted in center of pumpkin bite comes out clean. Cool bites in pan for 8 minutes then turn out onto wire rack to cool completely. Frost with cream cheese frosting.
