Pumpkin Health Nut Muffins

Moist and tender pumpkin muffins filled with a healthy dose of wheat flour, wheat germ, pumpking and walnuts.
 

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups all purpose flour
  • 1/2 cup wheat germ
  • 2/3 cup sugar
  • 2 teaspoons cinnamon
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup oil
  • 1 cup soy milk
  • 1 1/2 teaspoons vanilla
  • 1 15 oz can pumpkin puree
  • 1 cup chopped walnuts
 
Method

Preheat oven to 350 degrees. In a large mixing bowl, stir together flours, wheat germ, sugar, cinnamon, baking powder, baking soda and salt. In a medium mixing bowl, combine canola oil, soy milk, vanilla and pumpkin. Add wet ingredients to the dry ingredients and mix until thoroughly combined into a thick batter. Spray muffin tins with nonstick cooking spray. Fill muffin cups about 3/4 full. Sprinkle walnuts on top of each muffin. Bake 20 minutes, or until a toothpick inserted comes out clean. Transfer to a cooling rack.
