Pumpkin Muffins

Applesauce and egg product are used in this pumpkin muffin batter, which is seasoned with cinnamon, nutmeg and cloves.
Ingredients
- Cooking spray
- 2 cups flour
- 1 Tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cloves
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 2/3 cup unsweetened applesauce
- 1 cup canned pumpkin
- 2/3 cup sugar
- 1/2 cup refrigerated (or frozen & thawed) egg product
- 2/3 cup milk

Method
1. Preheat oven to 400F. Coat a 12-cup muffin tin with cooking spray. 2. Combine flour, baking powder, baking soada, cloves, cinnamon, and nutmeg in a large bowl. Combine and add applesauce, pumpkin, sugar, egg product and milk to flour mixture; stir until completely incorporated. 3. Pour batter into muffin tins so each cup is about 2/3 full. Bake for 20 to 25 minutes.
