Pumpkin Pecan Crunch Muffins

Buttermilk pumpkin muffins topped with pecans and wheat flakes cereal--serve for breakfast, as a healthy snack or to complement a special dinner.
 

Ingredients

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 3/4 cup dark brown sugar
  • 1 teaspoon pumpkin pie spice
  • 2/3 cup pumpkin
  • 1 egg
  • 1/2 teaspoon maple extract
  • 1/2 cup buttermilk
  • 1 cup chopped pecans
  • 1 cup wheat flakes cereal

Method

Combine flour, brown sugar and spice in bowl then set aside. Combine pumpkin, egg and extract in a small bowl. Add pumpkin mixture to flour mixture, alternating with buttermilk, then mix well. Spray muffin cups with nonstick spray. Fill each muffin cup 3/4 full with batter. Top each muffin with mixture of chopped pecans and crumbled wheat flakes cereal. Bake at 350 degrees for 15-18 minutes.
