Randy's Super Muffins

These super muffins create a wonderful taste with uncommon ingredients such as flaxseed meal, oat bran, soymilk and almond extract.
Ingredients
- 1 1/2 cup unbleached whole wheat flour
- 3/4 cup flaxseed meal
- 3/4 cup oat bran
- 1 cup dark brown sugar
- 2 tsp baking soda
- 1 tsp baking powder
- Pinch salt (optional)
- 2 tsp cinnamon
- 1 cup carrots, shredded
- 2 apples or bananas peeled and shredded
- 1 cup dark chocolate chips
- 1 cup chopped walnuts
- 3/4 cup milk or vanilla soy milk
- 2 eggs beaten before adding
- 1 tsp almond or vanilla extract

Method
Mix dry ingrediants together. Stir in carrots, apples and nuts. Mix liquids together, than add to dry ingredients until mixture is moist. Fill muffin tins approx 3/4 full (use a 12 muffin tin). Bake 30 minutes at 350 degrees.
Notes: Apples should be chopped until applesauce consistency. Carrots should chopped to smallest possible bits, and nuts chopped to desired size. Best served with Lingonberry jam and Smart Balance with Flaxseed oil.
