Reduced-fat Zucchini Bread

Whole-wheat flour and unsweetened applesauce help make this zucchini bread a reduced fat option.
Ingredients
- 3/4 cup egg substitute
- 1 2/3 cup sugar
- 1/2 cup canola oil
- 1/2 cup unsweetened applesauce
- 1 1/2 tsp vanilla extract
- 2 cups whole-wheat flour
- 1 cup all-purpose flour
- 1 tsp double-acting baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp ground nutmeg
- 2 tsp cinnamon
- 2 cups zucchini, coarsely shredded, packed
- 1 cup seedless golden raisins

Method
Beat egg substitute until light colored. Gradually add sugar. Add oil and applesauce. Sift dry ingredients together. Add to egg-sugar-oil mixture and beat until smooth. When well blended, stir in remaining ingredients. Place batter in two loaf pans (8 1/2? by 4 1/4?). Bake at 350 degrees for one hour or until toothpick inserted in center comes out clean.
