Rhubarb Orange Muffins

These sweet muffins are made with flour, sugar, butter, eggs, milk and baking powder. There's orange peel and juice for flavor and chopped rhubarb is folded in. You may also add pecans, if you wish.
Ingredients
- 3 cup all-purpose flour
- 1 cup sugar
- 1 tbsp. baking powder
- 1/2 c. butter (room temp)
- Grated zest from 1 orange
- 2 eggs, beaten
- 1 cup evaporated milk (or regular milk)
- 1/4 cup orange juice
- 1 1/2 cup chopped rhubarb
- 1/3 cup chopped pecans (optional)
- Sugar

Method
Set oven to 350 degrees. Mix flour, sugar, and baking powder. Blend in butter with fork or fingers until flaky. Add grated orange zest. Combine eggs, milk and orange juice. Stir into dry ingredients. Don't over mix. Gently stir in rhubarb and nuts, if using. Spoon into greased muffin tins. Sprinkle with additional sugar. Bake for 25 to 30 minutes until golden brown.
