Method

In a large mixing bowl dissolve yeast in the 1 1/4 cups warm water. Add shortening, 2 teaspoons of the salt, sugar, and 1 1/2 cups of the flour. Beat with an electric mixer on medium speed for 2 minutes, scraping bowl often. Add remaining 1 1/2 cups flour; stir in with a spoon. Cover with a cloth and let rise in a warm place until doubled in size (about 30 minutes). Stir batter down by beating 25 strokes with a spoon. Spread batter evenly in a greased 9 x 13 pan (dough will be very soft). Pat top and shape with greased fingers. In a small bowl mix together egg white and the 2 1/2 tablespoons water; brush over top of dough in pan. Sprinkle with the remaining 1/2 teaspoon salt, oregano, and pepper. Let rise in a warm place until double in size (about 40 minutes). Bake in a 350 degree oven for 35 to 40 minutes or until golden brown. Remove bread from pan; cool. Cut horizontally into 3 layers. Spread butter over cut sides of bread. Layer ham, cheese, salami, and onion between bread slices. Wrap tightly in foil. Bake in a 425 degree oven for 30 minutes. Cut into sandwiches.

Notes: This recipe can be made ahead. Just wrap it in foil and bake it just before serving.
