Rum Buckle Breakfast Bread

This quick bread combines Blueberry Buckle baby food, macadamia nuts, rum flavoring and pecans, and makes 2 loaves.
 

Ingredients

  • 2 1/2 cups flour
  • 1/2 tsp salt
  • 2 tsp baking soda
  • 1 cup light cream
  • 3 jars Blueberry Buckle Dessert (baby food)
  • 1/2 cup macadamia nuts (chopped)
  • 2 cups white sugar
  • 1 cup corn oil
  • 3 eggs (beaten slightly)
  • 1 Tbsp rum flavoring
  • 1/2 cup chopped pecans

Method

Mix together in mixing bowl. Pour into two greased and floured 8x4x2" loaf pans. Bake 350 degrees for 50 minutes or until knife inserted in the middle of loaf comes out clean. Let cool and store in airtight container. Refrigeration blends the flavors of the loaf.
