Seeds Nuts Apples and Pumpkin Cornbread

Dates and sunflower seeds add great texture to this earthy dessert. Cinnamon and nutmeg season the pumpkin and really bring out the fall flavors.
Ingredients
- 1/2 cup brown rice flour
- 1/2 cup amaranth flour
- 1/2 cup soy flour
- 1 tablespoon baking powder
- 1 teaspoon sea salt
- 1/2 cup date sugar
- 1 1/4 cups cornmeal
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 cup unsweetened applesauce
- 1 1/4 cups canned pumpkin, not pumpkin pie mix
- 2/3 cup rice or almond milk
- 1 cup apricot spreadable fruit
- 1/4 cup sunflower seeds
- 1/4 cup date pieces

Method
Preheat oven to 350 degrees. Coat a 9 X 9 pan with cooking spray. Mix all ingredients together with an electric mixer. Pour into pan and bake 45 minutes or until a toothpick comes out clean.
