Sleepy Time Muffins

These muffins have all of the right ingredients to relax the body and get you ready for bed. The bananas and whole wheat flour are the trick in this recipe.
 

Ingredients

  • 2 cups whole wheat flour (pastry flour preferably)
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 large ripe bananas
  • 1/4 cup honey
  • 1/2 cup milk or soymilk
  • 1/3 cup unsweetened applesauce
  • Dash of vanilla

Method

Mix all dry ingredients in a large bowl. Combine the wet ingredients in a blender until pureed. Pour the wet ingredients into the dry ingredients and mix only until completely moistened. Pour the mix into a muffin tin and bake at 350 degrees for 25-30 minutes or until golden brown.
