Slightly Sweet and Surprising Lentil Muffins


A sweet and savory muffin made with lentils--barbecue sauce, the surprise ingredient, adds distinctive flavor.



Ingredients:

  • 1/2 cup lentils
  • 3 cups water
  • 1/2 cup bottled barbecue sauce
  • 1 egg
  • 1/2 cup oil
  • 1/2 cup milk
  • 1/2 cup dark brown sugar
  • 1/2 cup raisins
  • 2 cups flour
  • 1 1/2 teaspoons salt
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 8 ounce package cream cheese, softened

Method

Cook lentils in water until tender, about 20 minutes. Drain and discard liquid. Preheat oven to 350 degrees. Spray 18 muffin tins with cooking spray. Puree lentils in blender with barbecue sauce, egg, oil, milk and brown sugar; blend until smooth. Add raisins. In large bowl, whisk together flour, salt, baking powder and soda. Add liquid mixture to dry and fold gently. Spoon into prepared muffin tins, filling cups 2/3 full. Bake 15 minutes or until golden brown. Serve hot with cream cheese.

Notes: The real surprise here is the use of barbecue sauce as an ingredient. It gives a flavor that is elusive and delicious. The muffins are moist and freeze well. Be sure to serve hot to ensure best flavor.
