Sour Cream Raisin Scones


These rich scones are slightly sweet from the sugar and raisins. Serve them for breakfast or as a snack.



Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 3/4 cup raisins
  • 1/2 cup sour cream
  • 2 eggs

Method

Preheat oven to 400 degrees. Mix flour, sugar, baking powder and salt in a large bowl. Cut in butter until mixture resembles coarse crumbs. Add raisins. In a small bowl mix sour cream and eggs together well. Add to flour mixture. Mix dough with hand until it holds together (it will be sticky). Turn onto floured board and knead 5 or 6 times. Halve the dough and pat each half into a circle about 1/2 inch thick. Cut each into 8 wedges. Place 1 1/2 inches apart on a greased cookie sheet or use baking parchment paper. Brush lightly with cream (optional). Bake 14 to 18 minutes until a light golden brown. Serve warm.

Notes: Use flour sparingly in the kneading stage, only enough so dough does not stick to your hands.
