Spiced Buttermilk Whole Wheat Pancakes

These cinnamon-spiced buttermilk pancakes are easily put together. Serve with maple syrup and your favorite fruit.
Ingredients
- 3/4 c. buttermilk
- 2 tsp. melted butter
- 1 egg
- 1 tsp vanilla
- 1/3 c. all-purpose flour
- 2/3 c. whole wheat flour
- 1 tsp. baking soda
- 2 Tbsp. sugar
- 1 tsp. ground cinnamon
- 1/2 tsp. salt

Method
1. Lightly coat a griddle with non-stick spray. Heat griddle to medium heat, just until a drop of water sizzles. 2. Beat buttermilk, butter, egg, and vanilla lightly. 3. Mix flours, soda, sugar, cinnamon, and salt. Add to milk mixture. Stir just enough to moisten dry ingredients. 4. For each pancake, pour about 1/4 cup batter onto heated griddle. When edges start to bubble, it's time to flip! Cook about 2 to 3 minutes more or until golden.
Notes: A great warm start to a Saturday morning. Great with crisp bacon and a warm cup of coffee. Keep pancakes warm in a 200 degree oven until you're ready to enjoy with warm maple syrup and blueberries.
