Spicy Pumpkin Bread with Maple Cheesecake Filling

Layers of maple flavored cheesecake with moist pumpkin spice bread--an unusual treat for breakfast, brunch or snacks.
Ingredients
- Cheesecake Filling:
- 9 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1/3 cup pure maple syrup, grade B
- 1 teaspoon maple extract
- 1 tablespoon all purpose flour
- 1 large egg
- Pumpkin Spice Bread:
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon freshly ground nutmeg
- 1 cup pumpkin puree, homemade or canned (not pumpkin pie filling)
- 1/2 cup vegetable or canola oil, not olive oil
- 2 large eggs
- 1 1/2 cups granulated sugar
- 1 cup black walnuts, chopped

Preheat oven to 325 degrees. Grease and flour a 9 X 5 loaf pan, or spray with nonstick cooking spray. Cheesecake Filling: In a medium bowl, combine cream cheese, granulated sugar, brown sugar, maple syrup, maple extract, flour and egg. Beat until mixture is well blended and smooth then set aside. Pumpkin Spice Bread: In a medium bowl, combine flour, baking soda, salt, cinnamon, ginger and nutmeg. Whisk to blend and set aside. Combine puree, oil, eggs and granulated sugar in a large mixing bowl and whisk to blend. Gradually add flour mixture until just combined then stir in walnuts. Spoon half of pumpkin batter into prepared pan. Spoon cheese mixture over pumpkin and smooth top. Pour remaining pumpkin mixture over cheese mixture and smooth. Bake until a tester, inserted into center of bread, comes out clean, 55-65 minutes. Remove from oven and set on a rack to cool in pan for 20 minutes. Remove bread from pan and set on rack to cool completely.
