Springtime Citrus Muffins


These muffins combine orange yogurt, orange extract, and pecans in a batter that also contains melted butter and granulated sugar.



Ingredients:

  • 1 2/3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup orange yogurt
  • 1 large egg, beaten to blend
  • 2 Tablespoons half & half
  • 1/4 teaspoon orange extract
  • 1/4 cup pecans, coarsely chopped
  • Glaze:
  • 2/3 cup powdered sugar
  • 2-3 teaspoons fresh orange juice
  • 1/4 teaspoon orange extract
  • 2 Tablespoons orange zest, finely grated (For garnish, optional)

Method

Preheat oven to 400F. Line a standard (2 1/2-inch) 12-cup muffin pan with paper or foil liners. In a small bowl combine the flour, the sugar, the baking powder, the baking soda and the salt. Whisk to blend and set aside. In a large bowl combine the butter, the yogurt, the egg, the half & half and the orange extract. Whisk to blend. Stir in the dry ingredients until just moistened. Fold in the pecans. Spoon batter into prepared muffin cups. Bake until a wooden pick inserted into the center of the muffins comes out clean, about 15 - 20 minutes. Remove from oven and cool muffins, in pan, for five minutes. Transfer to a rack set over a sheet of waxed paper. Spoon glaze over warm muffins. If desired, sprinkle orange zest over each muffin top. Transfer muffins to a serving platter and serve warm or at room temperature
