Strawberry Zucchini Bread

Caramelly tasting quickbread chock full of zucchini, strawberries and spices.

  • Total Time: 2 hours 30 minutes, including cooling time


3 cups Flour, reserve 2 tablespoons
1½ cups Packed Brown Sugar
1 Tbsp Baking Powder
1 tsp Salt
1½ tsp Cinnamon
½ tsp Nutmeg
1 cup Browned Butter, cooled or vegetable oil
4 Eggs
2 cups Zucchini, shredded
1½ cups Strawberries, dusted with 2 tbsp. of the flour
½ cup Walnuts, if desired


Heat oven to 350 degrees and grease and flour a bundt cake pan (I use Baker's Joy spray) or 2 loaf pans. Mix together the flour, brown sugar, baking powder, salt and spices until well combined. Add the butter or oil, the eggs, the zucchini and walnuts, if using, stirring until well combined -- the batter will be thick. Gently fold in the strawberries and pour into the prepared pan or loaf pans. Bake for 45-55 minutes or until cake tester comes out clean. Cool on wire rack for 10 minutes in pan(s) and turn out to finish cooling. Store in an airtight container, sprinkle with powdered sugar, if desired.
