A healthy, low fat banana bread with Splenda and oatmeal replacing the flour.

  • Servings: Serves 8

Ingredients:

2 cups Oatmeal, uncooked
1 cup Splenda
1 tsp Baking Soda
1 tsp Baking Powder
½ tsp Salt
3 Eggs
3 Ripe Bananas
1 tsp Vanilla
1 cup Chopped Walnuts, optional

Directions:

Preheat oven to 350 degrees. Mix all ingredients (except nuts) in a blender or food processor; dry ingredients first, then eggs, bananas and vanilla, blending until smooth. Stir in nuts and pour batter into a greased loaf pan. Bake for 45 minutes or until a toothpick can be inserted and removed clean.

Preparation Time: 10 min.

Cooking Time: 45-50 Min.
