Sugar Oil and Flour Free Banana Bread

A healthy, low fat banana bread with Splenda and oatmeal replacing the flour.
Ingredients
- 2 cups oatmeal, uncooked
- 1 cup Splenda
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 3 eggs
- 3 ripe bananas
- 1 tsp vanilla
- 1 cup chopped walnuts, optional

Method
Preheat oven to 350 degrees. Mix all ingredients (except nuts) in a blender or food processor; dry ingredients first, then eggs, bananas and vanilla, blending until smooth. Stir in nuts and pour batter into a greased loaf pan. Bake for 45 minutes or until a toothpick can be inserted and removed clean. Preparation Time: 10 min. Cooking Time: 45-50 Min.
