Sugarless Banana Bread with Dates and Sunflower Seeds

I twisted popular banana bread recipe for a healthier one. Sugar is replaced by dates and the flour is divided between spelt four, sunflower seeds and bulgur.

  • Total Time: 60 minutes

Ingredients:

Wet:
¾ cup Buttermilk or Kefir
10 Dates
¼ cup Oil
2 Large Eggs
3 Mashed Medium Ripe Bananas
½ cup Bulgur
Dry:
1 cups Spelt Flour
½ cup Ground Sunflower Seeds
1½ tsp Baking Powder
1 tsp Ground Cinnamon
½ tsp Baking Soda
½ tsp Sea Salt
½ tsp Ground Nutmeg

Directions:

Preheat oven to 375 degrees. Coat a 9 X 5 inch loaf pan with cooking spray. Cook grits according to package instructions. Blend buttermilk and figs until creamy, then pour into a large bowl. To the bowl, add all remaining wet ingredients, then mix well. Add the dry and mix again. Pour the batter into the form. Bake for 50 minutes. Leave the bread in the form for 10 minutes, then remove and cool on a wire rack.
