Sweet Lelani Pineapple-Coconut Bread

Flavors of the Pacific Islands--pineapple, coconut, banana and macadamia nuts--combine in this yeast loaf that's baked in the bread machine.
 

Ingredients

  • 1/2 cup canned pineapple chunks, chopped and well drained, (reserve juice)
  • 1/4 cup unsweetened coconut milk
  • 1/4 cup reserved pineapple juice
  • 1 egg
  • 1/2 cup very ripe banana slices
  • 1 teaspoon vanilla extract
  • 3 cups bread flour
  • 1/4 cup whole wheat flour
  • 1 teaspoon salt
  • 3 tablespoons butter, softened
  • 2 tablespoons brown sugar, packed
  • 1/2 cup shredded coconut
  • 1/3 cup chopped macadamia nuts
  • 2 teaspoons active dry yeast

Method

Place all ingredients in bread pan. Select light crust cycle. Press start. Remove bread from pan when done; cool on rack for 1 hour before slicing.

 

Notes: This is a wonderful Hawaiian Bread. Chock full of goodies ~ nuts, coconut, brown sugar, pineapple, etc. So full of island flavors.

 

Number of Servings: 12-16 slices
