Sweet Onion Chili Corn Bake

This is so good with a bowl of game time chili and it's a great snack while you're rooting for the home team.
Ingredients
- 2 large sweet onions, thinly sliced
- 1/2 cup butter or margarine
- 1 cup sour cream
- 1/2 cup milk
- 1/2 teaspoon salt
- 2 cups shredded cheddar cheese, divided
- 1 egg, lightly beaten
- 1 14.75 ounce can cream style corn
- 1 8.5 ounce package cornbread muffin mix
- 1 6 ounce can chopped green chilies

Method
In a large skillet, saute onions in butter until tender. In a small bowl, combine sour cream, milk and salt until blended. Stir in 1 cup cheese. Stir into onion mixture then remove from heat and set aside. In a bowl, combine egg, corn, cornbread mix and chili peppers. Pour into a greased 13 x 9 x 2 baking dish. Spoon onion mixture over top. Sprinkle with remaining cheese. Bake, uncovered, at 350 degrees for 45-50 minutes or until top is set and lightly browned. Let stand for 10 minutes before cutting.
