Sweet Potato Muffins

Mashed sweet potatoes are combined with two kinds of sugars and two flours, plus applesauce, spices and pecans, to make these muffins.
 

Ingredients

  • 1 lb sweet potatoes, peeled and cubed
  • 1 1/2 cups granulated sugar
  • 1 cup packed dark brown sugar
  • 1/2 cup (canola) oil
  • 4 eggs
  • 3/4 cup (natural) applesauce
  • 1 3/4 cups all-purpose flour
  • 1 3/4 cups whole wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2/3 cup water
  • 3/4 cup chopped pecans

Method

Preheat oven to 350 degrees. Spray two 12-cup muffin tins with cooking spray. Steam sweet potatoes about 20 minutes until soft. Mash with a potato masher and set aside. In bowl whisk together granulate sugar, brown sugar and oil. Add eggs, one at a time, whisking after each addition. Whisk in applesauce. Whisk in sweet potatoes. In a separate bowl whisk together all-purpose flour, whole wheat flour, baking soda, salt, cinnamon and nutmeg. Whisk in flour mixture in two batches, alternating with the water, until just combined. Fold in the pecans. Fill muffin cups about 2/3 full and bake for 20 minutes or until a toothpick inserted in the center comes out clean.

 

Notes: You can also use leftover baked sweet potatoes in this recipe.
