Sweet Raisin-Pumpkin Tiny Muffins

These muffins combine pumpkin, walnuts and raisins in a sweet, wheat batter with melted butter and spices.
Ingredients
- 2 cups all-purpose flour
- 1 cup whole wheat flour
- 2 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoon cinnamon
- 1 teaspoon allspice
- 4 large eggs, beaten
- 1 3/4 cups sugar
- 1/4 cup light brown sugar
- 1 can (15 oz) pumpkin
- 1 cup butter, melted
- 1 cup chopped walnuts
- 1 cup chopped raisins
- Cherry jelly
- Whipped cream, optional

Preheat oven to 350. Grease thirty-six muffin cups. Combine flour, wheat flour, baking soda, baking powder, cinnamon and allspice. Add pumpkin, melted butter, eggs and sugar; mix well. Stir in chopped walnuts and raisins. Mix well. Spoon batter into prepared muffin pans. Bake 15-20 minutes or until top springs back when lightly touched. Cool in pan on wire rack for 5 minutes. Remove from pan and put a little cherry jelly on top of each muffin. Serve with whipped cream, if desired.
Notes: I like pumpkin and walnuts together and to me this was a perfect muffin using walnuts, raisins and pumpkin, topped with cherry jelly. This is good with a cup of tea or coffee. This is an original recipe. Please used butter in this recipe for the best flavor.
