The Great Pumpkin's Muffins

In addition to the usual ingredients, this sweet muffin batter add canned pumpkin, cinnamon, cloves, & nutmeg. You may also stir in raisins and/or nuts.
Ingredients
- 2 cups sugar
- 1/2 cup vegetable oil
- 3 eggs
- 1 1/2 cups canned pumpkin
- 1/2 cup water
- 3 cups flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cloves
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup raisins (optional)
- 1 cup chopped walnuts (optional)

Method
In a large bowl, mix sugar, eggs, pumpkin, oil, and water. In a separate bowl, sift flour, baking powder, soda, salt, and spices. Stir dry ingredients into first mixture. Fold in raisins and/or walnuts, if using. Let stand 1/2 hour at room temperature. Put in greased muffin tins. Bake in preheated 400 degree oven approximately 15-20 minutes.
Notes: Note: For a more carefree morning, this batter may be mixed the night before, chilled, and set at room temperature about one-half hour before baking in the morning.
