Method

Preheat oven to 450 degrees. Dissolve yeast in bowl with water, salt, sugar and oil then stir. Add 2 cups flour and stir until well blended. Let rest in warm place for 5 to 10 minutes. Sprinkle with 1/4 cup flour and use a spoon to turn dough in bowl until flour is not loose but batter is drier then set aside. Lightly grease a dark nonstick 17 1/2 x 12 cookie sheet with shortening. If you want thicker crust use smaller pan. If using lighter pan reduce heat to 425 degrees and cook for 10 more minutes. Pour 2 tbsp olive oil in center of pan and spread lightly in center of pan using paper towel, leaving 1 inch around pan free from olive oil. Drop crust mix in center of pan. Using floured fingers gently spread to edges of pan with 1/4 cup of remaining flour. When dough gets sticky use more flour on fingers. Put sauce and toppings on crust. Drizzle 2 tbsp olive oil around exposed crust. Bake for 15-16 minutes. Cut into 8 squares.

Notes: Pizza will have thin crisp bottom crust with thicker like a bread stick outer crust.

Number of Servings: Eight
