Traditional Sweet Dough Kolachi

These little buns are made with a rich yeast dough that's filled with a sweet ground nuts mixture, shaped into crescents and baked.
 

Ingredients

  • 1 lb butter
  • 4 cups flour
  • 4 eggs, separated
  • 2 pkg dry yeast
  • 1/3 cup of warm water
  • 2 teaspoons of sugar
  • Ingredients for filling:
  • 4 cups of ground nuts (almonds, pecans or walnuts or a mixture of each is best.)
  • 1 cup granulated sugar
  • 4 egg whites, stiffly beaten
  • 3 Tablespoons of melted butter
  • 1 Teaspoon of vanilla extract
  • Ingredient for assembly:
  • 1/2 lb. of powdered sugar

Method

Kolachi instructions: Mix butter and flour, until it is the consistency of a pie or pastry dough, then add beaten egg yolks. Prepare yeast according to manufacturers directions, using the 1/3 cup warm, not hot, water and the sugar. Add yeast to the dough and blend well; the mixture will be sticky. Make the dough into small balls, and place on well-greased cookie sheet; refrigerate at least 5 hours, and overnight is best. Filling Instructions: Add the ground nuts, sugar to the stiffly beaten egg whites, and then add melted butter and vanilla to make a smooth paste. Assembly and baking instructions: Roll the chilled dough balls in the powdered sugar, to a flat circle. Place one scant teaspoon of filling across the edge of the dough round, and roll up the dough, forming into a crescent shape; loosely seal the edges. Bake on lightly greased cookie sheet until lightly golden brown, 10 to 15 minutes in preheated 350 degree oven.
