Triple Fruit Breakfast Croissants

This strata-like recipe includes peach preserves, eggs, and heavy cream.
Ingredients
- 6 croissants
- 1 cup peach preserves
- 2/3 cup orange-pineapple juice
- 5 eggs
- 1/2 teaspoon vanilla
- 1 cup heavy cream

Spray a 9x13-inch baking dish with nonstick cooking spray; set aside. Cut the croissants in half lengthwise. Arrange croissants in a single layer, cut side up, in prepared dish. In a food processor or blender puree peach preserves with 2 tablespoons of the orange-pineapple juice. Spread mixture evenly over croissant halves. In a bowl whisk together eggs, vanilla, and cream. Stir in the remaining orange-pineapple juice; pour evenly over the croissants. Cover and chill at least 6 hours or overnight. Let stand at room temperature for one hour before baking. Bake in a 350 degree oven for 30 to 35 minutes or until set.
Notes: Any variety of jam or preserves may be substituted in this recipe, but we enjoy it best when I use jam made with fresh peaches from our orchard. It?s great when we have overnight guests because I can prepare it the night before.
