Tropical Banana Brunch Muffins

The batter for these muffins contains mashed banana & three flavorings, and is topped with a crumbly mix of white chocolate, dried pineapple & macadamias.
Ingredients
- 1/2 cup mashed, ripe banana
- 1 large egg, beaten
- 1/4 cup (canola) oil
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon coconut extract
- 1/2 teaspoon banana extract
- 1 1/2 cups flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- Topping:
- 2 oz white chocolate, chopped
- 2 tablespoons finely chopped dried pineapple
- 1/4 cup chopped macadamia nuts
- 1 tablespoon sugar
- 1 tablespoon flour
- 1 tablespoon butter

Preheat oven to 400 degrees. Line a regular-size muffin pan with 12 paper bake cups; set aside. In a small bowl, combine topping ingredients using a pastry blender or fork, then set aside. In a large bowl, combine first 7 ingredients. Combine and add remaining 4 ingredients; stir just until combined. Do not over mix. Divide batter among muffin cups. Top each muffin with about one tablespoon of topping. Bake at 400 degrees for 15-18 minutes or until tops are light golden brown and a toothpick inserted in the middle of muffin comes out clean. Cool on rack.
Notes: Serve warm or cold.
