Vanilla Cinnamon Streusel Muffin

These muffins will be very aromatic. If you add the optional coffee drizzle, you will really have people on the edge of their seats waiting for one.
Ingredients
- Streusel:
- 1/2 cup fine-chopped walnuts, toasted or plain
- 1/2 cup sugar
- 2 tsp cinnamon
- 1 tbsp butter, melted and cooled
- Muffin:
- 1/2 cup butter, melted and cooled
- 1-1/2 cups all-purpose flour
- 3/4 cup sugar
- 1-1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2 large eggs
- 1 cup light sour cream
- 2 tsp pure vanilla extract
- Optional Drizzle:
- 2 tbsp butter, melted and cooled
- 1/2 - 1 cup 10X sugar
- 1 tbsp hot or warm coffee
- 1/2 tsp pure vanilla extract

Method
Have all ingredients at room temperature before starting. Prepare muffin tins by greasing and flouring or spray with flour-added non-stick cooking spray. In medium bowl, microwave 1/2 cup + 1 tbsp butter on high till almost melted. Take 1 tbsp melted butter out and place in small bowl for streusel topping. Add remainder of streusel ingredients to the butter and mix with fork, stirring till combined. Set aside. Measure dry ingredients into large mixing bowl, whisking till well combined. Set aside. Whisk the eggs into the now cooled (warm is ok) butter, till mixture is smooth. Add the vanilla and sour cream and whisk again till smooth and light. Be sure there are no lumps. Make a well in the dry ingredients and add the liquids all at once, till just barely combined. It is better to underbeat than overbeat muffin batter. Spoon about 2 tbsp batter into each of the muffin cups. Top with about 1 tbsp of streusel, then divide the remaining batter evenly among the cups. Divide remaining streusel among the muffin cups. Place in oven and immediately reduce the heat to 350 degrees F. Bake for 14-17 minutes, or till toothpick inserted in center of muffin returns with just a few crumbs. Cool in pans for 5 minutes, then remove muffins to rack to finish cooling. Optional drizzle: In small bowl, heat the butter and coffee in microwave till butter is almost melted. Add enough 10X sugar to make a glaze that will spoon easily onto muffins. Stir in vanilla. Whisk glaze ingredients till everything is smooth. Spoon glaze over muffins.
