Vera's Waffles With Blueberries

Put your waffle iron to work with this delicious waffle recipe. These classic waffles get fruity flavor from either fresh or frozen blueberries.
Ingredients
- 2 cups flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 3 eggs, separated
- 1-3/4 cups whole milk
- 4 tablespoons vegetable oil
- 4 tablespoon sugar
- 1/2 cup fresh or frozen blueberries, if frozen thaw and drain in a colander

Method
1. Combine the flour, baking powder, and salt in a bowl. 2. In a small bowl beat together the egg yolks, milk, and vegetable oil until well mixed. Add in the flour mixture in two additions, beating well after each addition. 3. In a large stainless steel or copper bowl beat the egg whites until soft peaks form, add the sugar, and then beat again until stiff peaks form. Fold a quarter of the whites into the flour and egg batter to lighten. Add the remaining whites and gently fold them into the batter being careful not to breakdown the light peaks. 4. Carefully fold in the blueberries. 5. Spoon enough batter to coat the heated waffle iron so surface is evenly coated -the weight of the waffle iron top will spread the batter out to the edge.
