Warm Morning Bread

Eat this bread warm for a tasty morning treat. Make it with your favorite nuts and fruit.
Ingredients
- 1 1/2 cups whole wheat flour
- 1/2 cup oat bran flour
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup Splenda
- 1 beaten egg
- 1/2 cup orange juice
- 3 Tbsp melted butter or margarine
- 1/4 cup dried cranberries
- 1/4 cup chopped pecans

Mix the first five dry ingredients. Add egg, juice, and butter and mix well. Add cranberries and pecans and mix. Turn into a greased 9x5-inch loaf pan. Bake at 325 degrees for about 60 minutes or until a toothpick inserted near the center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan and cool slightly.
Notes: Two slices of this hearty bread make a deliciously satisfying breakfast. Almonds or walnuts may be substituted for the pecans and dried blueberries, chopped dried apricots, or raisins can be substituted for the cranberries. Bread is best if warmed. Does not freeze well. Can use all whole wheat flour but the oat bran seems to make the loaves a little lighter. You may need to add up to 2 Tbsp more liquid depending on the whole wheat flour's absorption rate.
