Wheat Banana Berry Nut Muffin

Whole wheat and all-purpose flours are used in these blueberry-studded, ginger-flavored banana muffins. Chopped walnuts are also added.
 

Ingredients

  • 1 1/4 cup whole wheat flour
  • 1 1/4 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp ground ginger
  • 1 cup vegetable shortening
  • 2 cups sugar
  • 2 cup mashed ripe banana (about 6 medium-size bananas)
  • 4 eggs, light1y beaten
  • 1 cup chopped walnuts
  • 1 cup fresh or frozen blueberries

Method

Pre-heat oven at 400 degrees. Grease muffin pan or line with large paper baking cups. Stir flours, salt, baking powder and ginger; set aside. In large bowl mix the shortening, sugar, bananas and eggs; add dry ingredients and stir just until batter is blended. Fold in blueberries and walnuts. Fill prepared muffins pans about 2/3rds full. Bake about 20-25 minutes, or until a toothpick inserted in the center comes out clean. Remove from pans and serve warm. Optional: Garnish top of muffin with walnut half before baking.
