World's Best Pancakes

Buttermilk gives these pancakes their distinctive flavor and light, delicate texture.
 

Ingredients

  • 2 cups buttermilk
  • 1 1/2 cup flour
  • 1/4 cup vegetable oil
  • 3 eggs
  • 3/4 cup boiling water
  • 2 tbsp baking soda
  • 2 tsp salt

Method

In a large bowl add buttermilk, oil, and eggs; mix together. Stir in flour until just combined--don't worry about lumps. Heat water in a separate bowl until it is boiling, then add baking soda and salt. Pour hot water into batter. Stir until all lumps dissolve. You can add more flour for thicker pancakes if necessary. Place pancakes on heated griddle, and when tops start to bubble flip over. Best served with Karo pancake syrup.
