Worth the Effort Pancakes

Like the title of this recipe says, these pancakes are well worth the effort. Dry yeast and vanilla make these delicious.
 

Ingredients

  • 3 cups lukewarm milk
  • 1 pkg dry yeast
  • 3 cups flour
  • 4 large eggs separated
  • 1/3 cup sugar
  • 1/2 cup melted butter
  • 2 tsp vanilla
  • 1 1/2 tsp salt

Method

Sprinkle dry yeast over warm milk in small mixing bowl. In a separate bowl, beat egg yolks until frothy. Add flour, salt, sugar, butter, vanilla, and yeast/milk mixture. Stir until smooth. Beat egg whites until stiff. Fold the beaten egg whites into the egg yolk batter and let stand for ten minutes. Spray a non-stick pan or griddle with cooking spray. Heat fry pan until it sizzles when a drop of water is sprinkled on it. Use a 1/3 cup measuring cup to dip batter onto warm pan or griddle. When bubbles form on the top of the pancake, turn over to brown the other side. Watch carefully to ensure that the griddle is not too hot.

Number of Servings: 8 ,leftover batter can be stored in refrigerator
