Yellow Squash Dressing

This recipe is a great way to use vegetables from your garden and use up leftover corn bread. The sharp cheddar brings this side dish together.
 

Ingredients

  • 1 medium onion, diced
  • 1 10 oz can cream of mushroom soup
  • 2 cups cornbread
  • 3 eggs
  • 2 cups fresh squash or 1 box frozen
  • 1 cup grated sharp cheddar cheese
  • 1 tsp salt
  • 1/4 tsp black pepper

Method

Cook onions, squash, salt and pepper until vegetables are tender, about 30 minutes. Combine grated cheese, eggs, mushroom soup and cornbread with vegetables. Bake 35-40 minutes in a 350 degree oven until browned on top.
