Zucchini-Orange Muffins

Shredded zucchini and orange peel add moistness and flavor to these whole wheat muffins.
 

Ingredients

  • 2 med. zucchini
  • peel of 1 med. orange
  • 1 cup sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 1 1/4 cups veg. oil
  • 2 1/2 tsp. baking powder
  • 1 tsp. each: baking soda, cinnamon, salt, cloves
  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 cup walnuts

Method

Shred zucchini with medium shredder in food processor. Change to metal blade and add strips of orange rind. Add 1/2 cup sugar and process until rind is finely minced. Add eggs, vanilla and remaining sugar. Process 10 seconds. With motor on, add oil in a thin stream within one minute. Add baking powder, soda, salt and spices to batter and process 15 seconds. Put 1/2 flour, 1/2 nuts and 1/2 zucchini in and process with 1/2 seconds. pulses until ingredients disappear. Repeat. Do not overprocess. Divide batter among 18 muffin cups. Bake at lowest position for 20 minutes at 375.
